Overnight Oats became super popular because they’re such a quick, filling, and energizing breakfast option that can be made in advance and eaten on-the-go. However, typical recipes for overnight oats usually call for sweeteners, vanilla, nut butters, yogurt, nuts, etc. to be added in to the mason jar along with the oats. In my opinion, Overnight Granola may just be a new and improved version of Overnight Oats, as it makes the prep process even easier and the result even more delish! Granola (whether it’s store-bought or homemade or this mix) is already sweetened, so it doesn’t really need any extras. Oats, on the other hand, are pretty plain and bland, which is why their overnight version needs added pizazz. All you gotta do with the granola is cover it with some almond milk and refrigerate it overnight. The Granola Mix I’ve been making and sharing on the shelves of local businesses is my favorite blend to use for this breakfast idea because of the chewy golden raisins and yogurt chips that are already mixed in. Use your favorite granola and your favorite nut milk and I bet you will not be disappointed!

Speaking of nut milks and quick recipe ideas, did you know you can make almond milk just by blending a couple tablespoons of almond butter with a couple cups of filtered water? I learned this little hack from Alison Wu and it definitely gets the job done without any soaking, roasting, straining, or mess. Thank. you. Alison. 

If you’ve seen my Insta, you know I get excited about color and vibrance, so I added a small handful of blackberries into the Overnight Granola I had the other day, which made it hot pink once the berries were mixed in and lightly mashed. Adding fresh fruit like berries, sliced bananas, or strawberries is of course optional, but highly recommended. You can even add one more little handful of fresh granola on top before enjoying to add an extra crunch. 

Overnight Granola has been one of my favorite fridge necessities lately. If you like warm, cozy bowls of oatmeal in the winter, you’ll love refrigerated Overnight Granola for breakfast in the summer. 

Recipe:

  • Heaping 1/2 cup Granola Mix or granola of choice
  • 1 cup almond milk 
  • More granola, for topping (optional)
  • Fresh fruit, for topping (optional)

Method:

  1. Add granola and almond milk to a Mason jar. 
  2. Cover and refrigerate for at least 4-6 hours aka overnight. 
  3. Wake up, grab a spoon, add optional fruit/granola topping, and dig in!
